Description

A classic whole roasted chicken recipe that combines crispy skin, juicy meat, and fragrant herbs, perfect for dinner gatherings or weeknight meals.


Ingredients

  • 1 whole chicken
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 lemon, halved
  • Fresh herbs (such as rosemary, thyme, or parsley)
  • Garlic cloves (optional)


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat your chicken dry using paper towels.
  3. Drizzle olive oil over the chicken and season with salt and pepper.
  4. Stuff the cavity with the halved lemon, fresh herbs, and garlic cloves if desired.
  5. Place the chicken in a roasting pan and let it roast for about 1 hour, until the internal temperature hits 165°F (74°C).
  6. Allow the chicken to rest for 10-15 minutes before carving.

Notes

Letting the chicken rest after cooking ensures juiciness. Leftovers can be refrigerated for 3-4 days or frozen for 2-3 months.
