Ingredients

- 2 tablespoons olive oil

- 1 lemon, halved

Instructions
- Preheat your oven to 425°F (220°C).
- Pat your chicken dry using paper towels.
- Drizzle olive oil over the chicken and season with salt and pepper.
- Stuff the cavity with the halved lemon, fresh herbs, and garlic cloves if desired.
