Ingredients
- 1 cup Fresh or frozen corn
- 2 tablespoons Mayonnaise
- 2 tablespoons Sour cream
- 1 tablespoon Lime juice
- 1/4 cup Cotija cheese, crumbled (feta can substitute)
- Chili powder or cayenne pepper, to taste
- Fresh cilantro, for garnish
- Salt and pepper, to taste
Instructions
- If using fresh corn, grill or boil the corn until tender. Once cooked, let it cool slightly and cut the kernels off the cob.
- In a mixing bowl, combine the corn, mayonnaise, sour cream, and lime juice. Mix thoroughly until all ingredients are well combined.
- Add the crumbled Cotija cheese and season with chili powder, salt, and pepper. Adjust the flavor to your liking.
- Serve the mixture in cups, garnished with fresh cilantro for a pop of color and added flavor.
Notes
This dish can be made vegan by substituting vegan mayo and cashew cream for the dairy ingredients.
