Description

A refreshing summer snack featuring sweet corn, creamy accents, and tangy lime, perfect for picnics and gatherings.


Ingredients

  • 1 cup Fresh or frozen corn
  • 2 tablespoons Mayonnaise
  • 2 tablespoons Sour cream
  • 1 tablespoon Lime juice
  • 1/4 cup Cotija cheese, crumbled (feta can substitute)
  • Chili powder or cayenne pepper, to taste
  • Fresh cilantro, for garnish
  • Salt and pepper, to taste


Instructions

  1. If using fresh corn, grill or boil the corn until tender. Once cooked, let it cool slightly and cut the kernels off the cob.
  2. In a mixing bowl, combine the corn, mayonnaise, sour cream, and lime juice. Mix thoroughly until all ingredients are well combined.
  3. Add the crumbled Cotija cheese and season with chili powder, salt, and pepper. Adjust the flavor to your liking.
  4. Serve the mixture in cups, garnished with fresh cilantro for a pop of color and added flavor.

Notes

This dish can be made vegan by substituting vegan mayo and cashew cream for the dairy ingredients.
