Description

An elevated twist on the classic grilled cheese, featuring rich pesto and melted cheese for a delicious flavor experience.


Ingredients

  • Fresh bread (sourdough or whole wheat)
  • Pesto (store-bought or homemade)
  • Cheese (mozzarella, provolone, or a blend)
  • Butter or olive oil for grilling


Instructions

  1. Spread a layer of pesto on one side of each slice of bread.
  2. Place your cheese of choice on top of the pesto layer on one slice.
  3. Top with the second slice of bread, pesto side down.
  4. Heat a skillet over medium heat and add butter or olive oil.
  5. Once hot, place the sandwich in the skillet and grill until the bottom is golden and the cheese starts to melt, about 3-4 minutes.
  6. Carefully flip the sandwich and grill the other side until it’s also golden and crispy, about another 3-4 minutes.
  7. Remove from skillet, slice, and enjoy!

Notes

Pairs beautifully with a side of salad or tomato basil soup. Store leftovers in the refrigerator for up to 2 days.
