Description
An elevated twist on the classic grilled cheese, featuring rich pesto and melted cheese for a delicious flavor experience.
Ingredients
- Fresh bread (sourdough or whole wheat)
- Pesto (store-bought or homemade)
- Cheese (mozzarella, provolone, or a blend)
- Butter or olive oil for grilling
Instructions
- Spread a layer of pesto on one side of each slice of bread.
- Place your cheese of choice on top of the pesto layer on one slice.
- Top with the second slice of bread, pesto side down.
- Heat a skillet over medium heat and add butter or olive oil.
- Once hot, place the sandwich in the skillet and grill until the bottom is golden and the cheese starts to melt, about 3-4 minutes.
- Carefully flip the sandwich and grill the other side until it’s also golden and crispy, about another 3-4 minutes.
- Remove from skillet, slice, and enjoy!
Notes
Pairs beautifully with a side of salad or tomato basil soup. Store leftovers in the refrigerator for up to 2 days.
