Ingredients
- 3-4 pounds beef chuck roast
- 4-6 baby potatoes
- 4 large carrots, sliced
- 1 onion, quartered
- 3 cups beef broth
- 2-3 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Season the beef chuck roast generously with salt and pepper.
- Place the seasoned beef into the crockpot.
- Surround the beef with baby potatoes, sliced carrots, and quartered onion.
- In a separate bowl, whisk together the beef broth, minced garlic, Worcestershire sauce, and dried thyme. Pour this mix over the beef and veggies in the crockpot.
- Cover and cook on low for 8-10 hours or on high for 4-6 hours until the beef is fork-tender.
- When it’s ready, shred the beef with two forks and serve it alongside the flavorful vegetables and broth.
Notes
For a leaner option, substitute the chuck roast with brisket. For a vegetarian twist, use vegetable broth.
