Description

A heartwarming and tender Crockpot Pot Roast, perfect for family dinners and gatherings.


Ingredients

  • 3-4 pounds beef chuck roast
  • 4-6 baby potatoes
  • 4 large carrots, sliced
  • 1 onion, quartered
  • 3 cups beef broth
  • 2-3 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste


Instructions

  1. Season the beef chuck roast generously with salt and pepper.
  2. Place the seasoned beef into the crockpot.
  3. Surround the beef with baby potatoes, sliced carrots, and quartered onion.
  4. In a separate bowl, whisk together the beef broth, minced garlic, Worcestershire sauce, and dried thyme. Pour this mix over the beef and veggies in the crockpot.
  5. Cover and cook on low for 8-10 hours or on high for 4-6 hours until the beef is fork-tender.
  6. When it’s ready, shred the beef with two forks and serve it alongside the flavorful vegetables and broth.

Notes

For a leaner option, substitute the chuck roast with brisket. For a vegetarian twist, use vegetable broth.
