Description

Tender, savory beef short ribs slow-cooked to perfection, perfect for winter meals and family gatherings.


Ingredients

  • 4 pounds bone-in beef short ribs (about 8 ribs)
  • 1 ½ tablespoons cornstarch
  • 1 ½ teaspoons salt
  • 1 ½ teaspoons black pepper
  • ¾ teaspoon onion powder
  • ¾ teaspoon garlic powder
  • ½ teaspoon cayenne pepper
  • 1-2 tablespoons avocado oil (more as needed)
  • 2 sweet onions (peeled and cut into 1-inch thick slices)
  • 6 garlic cloves (peeled and minced)
  • ¼ cup balsamic vinegar or Worcestershire sauce
  • 2 ½ cups beef broth
  • 2 tablespoons tomato paste
  • 2 sprigs fresh thyme leaves (chopped)
  • 2 sprigs fresh rosemary (chopped)
  • 2 bay leaves
  • 5 large carrots (cut into 1-inch thick rounds)
  • Optional herbs for garnish (parsley, rosemary, thyme)


Instructions

  1. Pat the short ribs dry with a paper towel.
  2. In a small bowl, mix the cornstarch with salt, pepper, onion powder, garlic powder, and cayenne pepper. Apply this seasoning mix to the ribs, massaging it into the meat.
  3. Heat a large skillet over medium-high heat and add 1 tablespoon of avocado oil. Sear the short ribs on both sides until browned, about 5 minutes per side. Transfer the seared ribs to the slow cooker.
  4. Sauté the onions and minced garlic in the same skillet until fragrant, about 1-2 minutes.
  5. Deglaze the pan with balsamic vinegar or Worcestershire sauce, scraping up the browned bits.
  6. Add beef broth, tomato paste, thyme, rosemary, and bay leaves to the mixture, and bring to a boil before removing from heat.
  7. Pour the sauce over the short ribs in the slow cooker. Cover and cook on LOW for 6-8 hours or HIGH for 4-6 hours, until tender.
  8. In the last 1-2 hours of cooking, add the chopped carrots.
  9. Garnish with fresh herbs and serve hot with mashed potatoes, rice, or crusty bread.

Notes

For best flavor, let the dish cool before refrigerating to allow the flavors to meld. You can prepare ingredients ahead of time and cook the next day.
