Ingredients
- 4 cups pumpkin puree (fresh or canned)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream or coconut milk
- 1 tablespoon olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
- Optional garnishes: pumpkin seeds, a dollop of Greek yogurt, or fresh herbs
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onions and cook until translucent, about 5 minutes.
- Stir in minced garlic and cumin; sauté for another minute until fragrant.
- Pour in pumpkin puree and broth, stirring to combine.
- Bring to a gentle boil, then reduce heat and let it simmer for 15 minutes.
- Remove from heat and blend the soup using an immersion blender until smooth.
- Stir in heavy cream and season with salt and pepper to taste.
Notes
For a vegan version, substitute heavy cream with coconut milk. You can enhance the flavor by roasting the pumpkin beforehand.
