  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream or coconut milk
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Optional garnishes: pumpkin seeds, a dollop of Greek yogurt, or fresh herbs


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onions and cook until translucent, about 5 minutes.
  3. Stir in minced garlic and cumin; sauté for another minute until fragrant.
  4. Pour in pumpkin puree and broth, stirring to combine.
  5. Bring to a gentle boil, then reduce heat and let it simmer for 15 minutes.
  6. Remove from heat and blend the soup using an immersion blender until smooth.

Notes
