Ingredients
- 2 cups cooked chicken, shredded or cubed
- 1 cup ranch dressing
- 1 cup cooked rice (white or brown)
- 1½ cups shredded cheese (use your favorite blend)
- 1 cup mixed vegetables (like broccoli or peas)
- Salt and pepper to taste
- Optional: chopped green onions for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked chicken, ranch dressing, and mixed vegetables. Stir until well coated.
- Add the cooked rice to the mixture and season with salt and pepper.
- Transfer the mixture into a greased baking dish and sprinkle shredded cheese evenly on top.
- Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and golden.
- Once done, let it cool for a few minutes before serving.
Notes
For added flavor, marinate the chicken in ranch dressing beforehand. You can use rotisserie chicken to save time. Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months.
