Ingredients
- 4 boneless, skinless chicken thighs or breasts
- 8 oz cream cheese
- 1 cup chicken broth
- 3 cloves garlic, minced
- 1 tbsp Italian seasoning
- 2 cups fresh spinach
- 1 cup cherry tomatoes
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions
- Add olive oil to the slow cooker.
- Season the chicken with salt, pepper, and Italian seasoning, placing it in the pot.
- In a bowl, mix the cream cheese and chicken broth until smooth, then pour over the chicken.
- Add minced garlic and cherry tomatoes on top.
- Cover and cook on low for 4 hours, or until the chicken is tender and cooked through.
- In the last 30 minutes of cooking, stir in the fresh spinach until wilted.
- Serve with your favorite side or over rice.
