Ingredients
- 1 can chickpeas, drained and rinsed
- 1 cup cooked chicken, shredded
- 1/2 cup diced celery
- 1/2 cup diced red bell pepper
- 1/4 cup red onion, diced
- 1/4 cup mayonnaise
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Lettuce leaves for serving (optional)
Instructions
- In a large bowl, combine the drained chickpeas, shredded chicken, celery, bell pepper, and red onion.
- In a small bowl, mix the mayonnaise, lemon juice, salt, and pepper.
