Description

A quick and satisfying Chickpea Chicken Salad that’s bursting with protein, fiber, and vibrant veggies, perfect for lunch or a light dinner.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cup cooked chicken, shredded
  • 1/2 cup diced celery
  • 1/2 cup diced red bell pepper
  • 1/4 cup red onion, diced
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Lettuce leaves for serving (optional)


Instructions

  1. In a large bowl, combine the drained chickpeas, shredded chicken, celery, bell pepper, and red onion.
  2. In a small bowl, mix the mayonnaise, lemon juice, salt, and pepper.
  3. Pour the dressing over the chickpea mixture.
  4. Stir until all ingredients are well combined.
