Description

A delightful wrap filled with juicy marinated chicken, vibrant veggies, and a spicy kick, perfect for busy weeknights or casual gatherings.


Ingredients

  • 0.75 lb boneless, skinless chicken breasts
  • ¼ cup lime juice
  • ½ tsp chili powder
  • ½ tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ tsp salt
  • 3 tbsp olive oil
  • 1 Tbsp chipotle pepper in adobo
  • 4 large tortillas
  • 1 cup uncooked rice
  • 1 small red bell pepper
  • 1 jalapeño
  • ½ red onion, sliced
  • 3 garlic cloves, minced
  • 1 tsp olive oil
  • ¾ cup corn kernels
  • 1 cup black beans
  • ¼ cup cotija cheese
  • ⅓ cup sour cream
  • 1½ Tbsp honey
  • ½-1 Tbsp chipotle peppers in adobo
  • 1 Tbsp lime juice
  • 3 Tbsp fresh cilantro, chopped
  • 1-2 Tbsp water
  • ¼ tsp salt


Instructions

  1. Marinate the Chicken: In a bowl, combine lime juice, olive oil, and seasonings (chili powder, onion powder, garlic powder, smoked paprika, and salt). Add diced chicken, ensuring it is well-coated. Let it marinate for at least 15 minutes to enhance flavor.
  2. Cook the Rice: Prepare the rice according to package instructions. This will be the hearty base of your wrap.
  3. Sauté the Chicken: Heat a skillet over medium heat and cook the marinated chicken for 12–15 minutes, or until it’s cooked through and golden brown.
  4. Add the Vegetables: In the same skillet, throw in the sliced bell pepper, jalapeño, and red onion. Sauté until tender (about 4-5 minutes), then add minced garlic and cooked chicken back into the mix to warm through.
  5. Assemble the Wraps: On each tortilla, layer rice, chicken mixture, corn, beans, and cotija cheese. Drizzle with your choice of sauce, roll tightly like a burrito, and serve immediately!

Notes

Feel free to substitute chicken with turkey or plant-based alternatives for different flavors. Store leftovers in the refrigerator for up to 3 days.
