Description

A delightful pasta salad combining hearty pasta with a medley of colorful vegetables, perfect for potlucks and family gatherings.


Ingredients

  • Pasta (such as rotini or penne)
  • Black beans (drained and rinsed)
  • Corn (canned or frozen, thawed)
  • Cherry tomatoes (halved)
  • Bell peppers (diced)
  • Red onion (finely chopped)
  • Fresh cilantro (chopped)
  • Lime juice
  • Olive oil
  • Cumin
  • Salt and pepper


Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and allow to cool.
  2. In a large mixing bowl, combine the black beans, corn, cherry tomatoes, bell peppers, red onion, and cilantro.
  3. In a separate bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  4. Add the cooled pasta to the vegetable mixture and gently toss.
  5. Pour the dressing over the pasta salad and mix well to combine. Adjust seasoning as necessary.
  6. Allow the salad to chill for at least 30 minutes before serving for enhanced flavor.

Notes

For the best flavor, let the salad marinate in the refrigerator for at least an hour. Store any leftovers in an airtight container in the refrigerator for up to three days. Freeze before adding dressing for best results.
