Ingredients
- Pasta (such as rotini or penne)
- Black beans (drained and rinsed)
- Corn (canned or frozen, thawed)
- Cherry tomatoes (halved)
- Bell peppers (diced)
- Red onion (finely chopped)
- Fresh cilantro (chopped)
- Lime juice
- Olive oil
- Cumin
- Salt and pepper
Instructions
- Cook the pasta according to package instructions until al dente. Drain and allow to cool.
- In a large mixing bowl, combine the black beans, corn, cherry tomatoes, bell peppers, red onion, and cilantro.
- In a separate bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
- Add the cooled pasta to the vegetable mixture and gently toss.
- Pour the dressing over the pasta salad and mix well to combine. Adjust seasoning as necessary.
- Allow the salad to chill for at least 30 minutes before serving for enhanced flavor.
