Description

A convenient and flavorful butter chicken made in a slow cooker, perfect for family dinners.


Ingredients

  • 2 tablespoons Coconut Oil (or Olive Oil)
  • 1.5 cups Yellow Onion (finely diced)
  • 2 tablespoons Ginger Paste
  • 4 cloves Minced Garlic
  • 2 teaspoons Smoked Paprika
  • 2 teaspoons Ground Cumin
  • 1 teaspoon Ground Turmeric
  • 2 teaspoons Garam Masala
  • 28 ounces Diced Tomatoes
  • 2 pounds Boneless Skinless Chicken Thighs
  • 1 cup Heavy Cream (or coconut cream)


Instructions

  1. Dice the onions and mince the garlic to prep your ingredients.
  2. In your slow cooker, add coconut oil, diced onions, ginger paste, minced garlic, smoked paprika, ground cumin, ground turmeric, garam masala, a pinch of salt, and the diced tomatoes. Stir to combine.
  3. Nestle the chicken thighs into the mixture, ensuring they are covered well with the fragrant sauce.
  4. Cook on low heat for about 240 minutes, or until the chicken is tender and easily pulled apart.
  5. Just before serving, stir in the heavy cream (or coconut cream) for that signature creaminess.

Notes

Serve with basmati rice, naan, or cauliflower rice. Garnish with fresh cilantro.
