Ingredients
- 8 ounces elbow macaroni
- 4 hard-boiled eggs, chopped
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup chopped green onions
- 1/4 cup diced pickles or relish
- Fresh dill for garnish (optional)
Instructions
- Cook elbow macaroni according to package instructions until al dente. Drain and let cool.
- In a large mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper. Mix until smooth.
- Add chopped hard-boiled eggs, green onions, and pickles to the dressing. Gently fold in the cooled pasta until fully coated.
- Taste and adjust seasonings as needed.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld.
Notes
