Ingredients

- Cream cheese
- Chicken broth or stock

Instructions
- Place the chicken in the slow cooker.
- In a separate bowl, combine cream cheese, chicken broth, diced tomatoes, Italian seasoning, and garlic. Mix until well combined.
- Pour the mixture over the chicken in the slow cooker.
- Cover and cook on low for 4 hours or until the chicken is fully cooked and tender.
- If using, add spinach in the last 30 minutes of cooking.
- Shred the chicken right in the slow cooker before serving, and stir to incorporate everything.
- Serve with a sprinkle of shredded cheese on top.
