Description

Ingredients

  • Chicken breasts or thighs
  • Cream cheese
  • Chicken broth or stock
  • Diced tomatoes (preferably fire-roasted)
  • Italian seasoning blend
  • Garlic (fresh or powdered)
  • Fresh spinach (optional)
  • Shredded cheese (for topping)


Instructions

  1. Place the chicken in the slow cooker.
  2. In a separate bowl, combine cream cheese, chicken broth, diced tomatoes, Italian seasoning, and garlic. Mix until well combined.
  3. Pour the mixture over the chicken in the slow cooker.
  4. Cover and cook on low for 4 hours or until the chicken is fully cooked and tender.
  5. If using, add spinach in the last 30 minutes of cooking.
  6. Shred the chicken right in the slow cooker before serving, and stir to incorporate everything.
  7. Serve with a sprinkle of shredded cheese on top.

Notes
