Description

Fluffy pancakes swirled with gooey cinnamon and topped with decadent icing, perfect for a special breakfast treat.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup milk (or a dairy-free alternative)
  • 2 eggs
  • 2 tsp baking powder
  • 2 tbsp sugar
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • Butter (for cooking)
  • 1 cup powdered sugar (for icing)
  • 2 tbsp cream cheese (optional for icing)


Instructions

  1. In a bowl, combine dry ingredients: flour, baking powder, sugar, and ground cinnamon.
  2. In another bowl, whisk together the wet ingredients: milk, eggs, and vanilla extract.
  3. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  4. Prepare the cinnamon filling by mixing sugar and cinnamon in a small bowl.
  5. Heat a skillet over medium heat and add a bit of butter. Pour in pancake batter to form a circle.
  6. Before it sets, sprinkle the cinnamon filling over the pancake and gently swirl it with a toothpick or knife.
  7. Flip when bubbles form and cook until golden. Repeat with remaining batter.
  8. For the icing, mix powdered sugar with a splash of milk (and cream cheese if using) until smooth.
  9. Drizzle the icing over the stacked pancakes and serve warm.

Notes

For extra indulgence, add whipped cream or a sprinkle of chopped nuts. You can also customize flavors by adding chocolate chips or seasonal spices.
