Ingredients
- 1 cup all-purpose flour
- 1 cup milk (or a dairy-free alternative)
- 2 eggs
- 2 tsp baking powder
- 2 tbsp sugar
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- Butter (for cooking)
- 1 cup powdered sugar (for icing)
- 2 tbsp cream cheese (optional for icing)
Instructions
- In a bowl, combine dry ingredients: flour, baking powder, sugar, and ground cinnamon.
- In another bowl, whisk together the wet ingredients: milk, eggs, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Prepare the cinnamon filling by mixing sugar and cinnamon in a small bowl.
- Heat a skillet over medium heat and add a bit of butter. Pour in pancake batter to form a circle.
- Before it sets, sprinkle the cinnamon filling over the pancake and gently swirl it with a toothpick or knife.
- Flip when bubbles form and cook until golden. Repeat with remaining batter.
- For the icing, mix powdered sugar with a splash of milk (and cream cheese if using) until smooth.
- Drizzle the icing over the stacked pancakes and serve warm.
Notes
For extra indulgence, add whipped cream or a sprinkle of chopped nuts. You can also customize flavors by adding chocolate chips or seasonal spices.
