Description

A comforting one-pot dish of tender chicken and fluffy rice packed with savory flavors, perfect for busy weeknights.


Ingredients

  • 4 chicken thighs (bone-in or boneless)
  • 1 cup rice (long grain or jasmine)
  • 2 cups chicken broth
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional: Fresh parsley for garnish


Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and bell pepper. Sauté until soft.
  2. Season the chicken with paprika, thyme, salt, and pepper. Add the chicken to the pot and brown on all sides.
  3. Once browned, add the rice and stir to coat.
  4. Pour in the chicken broth and bring to a boil.
  5. Reduce heat, cover, and let simmer for about 30-35 minutes, or until the rice and chicken are fully cooked.
  6. Remove from heat and allow to rest for a few minutes before serving. Garnish with fresh parsley if desired.

Notes

Pairs beautifully with a side salad or roasted vegetables. For added flavor, a dash of lemon juice or toasted nuts can elevate the dish.
