Ingredients
- 4 chicken thighs (bone-in or boneless)
- 1 cup rice (long grain or jasmine)
- 2 cups chicken broth
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon paprika
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- Optional: Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and bell pepper. Sauté until soft.
- Season the chicken with paprika, thyme, salt, and pepper. Add the chicken to the pot and brown on all sides.
- Once browned, add the rice and stir to coat.
- Pour in the chicken broth and bring to a boil.
- Reduce heat, cover, and let simmer for about 30-35 minutes, or until the rice and chicken are fully cooked.
- Remove from heat and allow to rest for a few minutes before serving. Garnish with fresh parsley if desired.
