Ingredients
- 4 chicken thighs or breasts
- 1 cup of chicken broth
- 1 can of cream of chicken soup (or homemade version)
- 1 envelope of onion soup mix
- 2 tablespoons of olive oil
- Fresh herbs (thyme or parsley) for garnish
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil over medium heat in a large skillet. Season chicken with salt and pepper, then sear on both sides until golden brown.
- Combine chicken broth, cream of chicken soup, and onion soup mix in a bowl. Stir until blended.
- Place the seared chicken in a baking dish, then pour the soup mixture over it.
- Cover the dish with foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes to crisp the chicken.
- Garnish with fresh herbs before serving.
Notes
For extra flavor, marinate the chicken overnight. A splash of lemon juice before serving can brighten the dish.
