Ingredients
- 1 ½ cups orzo
- 1 lb chicken breast, diced
- 2 large onions, thinly sliced
- 3 cups chicken broth
- 1 cup shredded cheese (Gruyère or Swiss recommended)
- 2 tablespoons olive oil
- 1 teaspoon thyme
- Salt and pepper to taste
- Optional: Fresh parsley for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat. Add onions and cook, stirring frequently for about 15 minutes, until they are caramelized.
- Add diced chicken to the skillet and cook until no longer pink, approximately 5-7 minutes.
- Stir in the thyme, salt, and pepper, followed by the orzo and chicken broth. Bring to a gentle simmer for 5 minutes.
- Transfer the mixture to a baking dish and sprinkle with cheese on top.
- Bake in the oven for 15-20 minutes or until the cheese is bubbly and golden.
Notes
For an extra flavor boost, add a splash of balsamic vinegar while caramelizing the onions.
