Description

A comforting casserole that combines the rich flavors of French onion soup with orzo pasta and tender chicken, perfect for any occasion.


Ingredients

  • 1 ½ cups orzo
  • 1 lb chicken breast, diced
  • 2 large onions, thinly sliced
  • 3 cups chicken broth
  • 1 cup shredded cheese (Gruyère or Swiss recommended)
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Optional: Fresh parsley for garnish


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat. Add onions and cook, stirring frequently for about 15 minutes, until they are caramelized.
  3. Add diced chicken to the skillet and cook until no longer pink, approximately 5-7 minutes.
  4. Stir in the thyme, salt, and pepper, followed by the orzo and chicken broth. Bring to a gentle simmer for 5 minutes.
  5. Transfer the mixture to a baking dish and sprinkle with cheese on top.
  6. Bake in the oven for 15-20 minutes or until the cheese is bubbly and golden.

Notes

For an extra flavor boost, add a splash of balsamic vinegar while caramelizing the onions.
