Description

A comforting baked casserole featuring savory chicken, tender orzo, and the rich flavors of French onion soup.


Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 cup orzo pasta
  • 2 large onions, thinly sliced
  • 3 cups chicken broth
  • 1 cup shredded cheese (such as Gruyère or Swiss)
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh thyme (optional, for garnish)


Instructions

  1. In a large skillet, heat olive oil over medium heat. Add onions and cook until caramelized, stirring occasionally, about 15 to 20 minutes.
  2. Stir in garlic and cook for an additional minute until fragrant.
  3. In a large mixing bowl, combine cooked chicken, orzo, caramelized onion mixture, and chicken broth. Season with salt and pepper.
  4. Transfer the mixture to a baking dish and top with shredded cheese.
  5. Bake at 375°F (190°C) for about 25-30 minutes, or until the cheese is bubbly and golden brown.

Notes

For best results, use rotisserie chicken to save prep time. Add a splash of white wine for extra flavor in the onion mixture.
