Ingredients
- 2 cups cooked chicken, shredded or diced
- 1 cup orzo pasta
- 2 large onions, thinly sliced
- 3 cups chicken broth
- 1 cup shredded cheese (such as Gruyère or Swiss)
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh thyme (optional, for garnish)
Instructions
- In a large skillet, heat olive oil over medium heat. Add onions and cook until caramelized, stirring occasionally, about 15 to 20 minutes.
- Stir in garlic and cook for an additional minute until fragrant.
- In a large mixing bowl, combine cooked chicken, orzo, caramelized onion mixture, and chicken broth. Season with salt and pepper.
- Transfer the mixture to a baking dish and top with shredded cheese.
- Bake at 375°F (190°C) for about 25-30 minutes, or until the cheese is bubbly and golden brown.
Notes
For best results, use rotisserie chicken to save prep time. Add a splash of white wine for extra flavor in the onion mixture.
