Description

A warm and comforting blend of savory flavors featuring tender chicken, aromatic onions, and hearty rice for a satisfying meal.


Ingredients

  • 1.5 lbs chicken thighs or breasts
  • 1 large onion, thinly sliced
  • 2 cups cooked rice (brown or white)
  • 2 cups chicken broth
  • 1 cup shredded cheese (your choice)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Optional: fresh herbs for garnish


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat and sauté the onions until caramelized, roughly 15 minutes.
  3. Season the chicken with salt and pepper, then add to the skillet, browning on both sides for about 5 minutes.
  4. Layer cooked rice evenly on the bottom of a baking dish, followed by the chicken and caramelized onions.
  5. Pour the chicken broth over the top and sprinkle with cheese.
  6. Cover the dish with aluminum foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.

Notes

For added flavor, consider using homemade broth and sautéing garlic with the onions. Feel free to experiment with different types of cheese and add vegetables for more texture.
