Description

A vibrant and nutritious lentil salad tossed with tangy balsamic vinegar, perfect for any occasion.


Ingredients

  • 1 cup lentils
  • 2 cups water
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/2 cucumber, diced
  • Salt and pepper to taste
  • Crusty bread for serving (optional)


Instructions

  1. Rinse the lentils under cold water, then place them in a pot with the 2 cups of water. Bring it to a boil.
  2. Reduce the heat and let the lentils simmer for about 20 minutes, until they are tender. Drain and set aside to cool.
  3. In a large bowl, whisk together the balsamic vinegar, olive oil, minced garlic, salt, and pepper.
  4. Add the cooled lentils, cherry tomatoes, red onion, and cucumber to the bowl.
  5. Toss everything together gently until well coated.
  6. Serve with crusty bread on the side, if desired.

Notes

For creamy variations, try adding crumbled feta or diced avocado. Chilling the salad for 30 minutes enhances flavors.
