Ingredients
- 1 cup lentils
- 2 cups water
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 1 garlic clove, minced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1/2 cucumber, diced
- Salt and pepper to taste
- Crusty bread for serving (optional)
Instructions
- Rinse the lentils under cold water, then place them in a pot with the 2 cups of water. Bring it to a boil.
- Reduce the heat and let the lentils simmer for about 20 minutes, until they are tender. Drain and set aside to cool.
- In a large bowl, whisk together the balsamic vinegar, olive oil, minced garlic, salt, and pepper.
- Add the cooled lentils, cherry tomatoes, red onion, and cucumber to the bowl.
- Toss everything together gently until well coated.
- Serve with crusty bread on the side, if desired.
Notes
For creamy variations, try adding crumbled feta or diced avocado. Chilling the salad for 30 minutes enhances flavors.
