A refreshing and versatile salad featuring nutty farro, fresh vegetables, and creamy feta cheese, perfect for any occasion.
Ingredients
- 1 cup farro
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, finely chopped
- 1 cup feta cheese, crumbled
- 1/4 cup olives, pitted and sliced
- 1/4 cup fresh parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse the farro under cold water and drain well.
- In a medium pot, combine farro and water. Bring to a boil, reduce heat, cover, and simmer for 25–30 minutes until tender. Drain extra water and allow to cool.
- In a large bowl, mix cooled farro, cherry tomatoes, cucumber, red onion, feta, olives, and parsley.
- In a small bowl, whisk olive oil, lemon juice, salt, and pepper. Pour dressing over salad and toss gently to combine.
- Adjust seasoning as needed and serve chilled or at room temperature.
Notes
This salad can be made ahead of time and stored in the refrigerator for up to 3 days. For extra flavor, consider toasting the farro before cooking.
