Description

A refreshing and versatile salad featuring nutty farro, fresh vegetables, and creamy feta cheese, perfect for any occasion.


Ingredients

  • 1 cup farro
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, finely chopped
  • 1 cup feta cheese, crumbled
  • 1/4 cup olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste


Instructions

  1. Rinse the farro under cold water and drain well.
  2. In a medium pot, combine farro and water. Bring to a boil, reduce heat, cover, and simmer for 25–30 minutes until tender. Drain extra water and allow to cool.
  3. In a large bowl, mix cooled farro, cherry tomatoes, cucumber, red onion, feta, olives, and parsley.
  4. In a small bowl, whisk olive oil, lemon juice, salt, and pepper. Pour dressing over salad and toss gently to combine.
  5. Adjust seasoning as needed and serve chilled or at room temperature.

Notes

This salad can be made ahead of time and stored in the refrigerator for up to 3 days. For extra flavor, consider toasting the farro before cooking.
