Ingredients

  • 2 cups mixed greens
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1 cup cooked chicken breast, diced
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the mixed greens, diced cucumber, halved cherry tomatoes, thinly sliced red onion, pitted olives, and diced chicken breast.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper to create a flavorful dressing.
  3. Drizzle the dressing over the salad mixture and toss gently to combine all the ingredients evenly.
