Description

A wholesome baked oatmeal with tangy lemon and sweet blueberries, perfect for a nutritious breakfast.


Ingredients

  • 2 cups rolled oats
  • 2 cups almond milk (or your favorite milk)
  • 1/4 cup maple syrup or honey
  • 1 cup fresh blueberries (frozen works too)
  • Zest and juice of 1 lemon
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/2 cup chopped nuts (optional, for crunch)


Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a large bowl, combine rolled oats, baking powder, cinnamon, and a pinch of salt.
  3. In another bowl, whisk together the almond milk, maple syrup, lemon juice, lemon zest, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in blueberries gently.
  5. Transfer the mixture into the prepared baking dish, spreading evenly.
  6. Bake in the preheated oven for about 35 minutes, or until the top is golden and set.
  7. Let it cool slightly before serving.

Notes

For best results, avoid overmixing the batter to keep the oats fluffy. Use frozen blueberries directly without thawing.
