Ingredients
- 2 cups rolled oats
- 2 cups almond milk (or your favorite milk)
- 1/4 cup maple syrup or honey
- 1 cup fresh blueberries (frozen works too)
- Zest and juice of 1 lemon
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- 1/2 cup chopped nuts (optional, for crunch)
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- In a large bowl, combine rolled oats, baking powder, cinnamon, and a pinch of salt.
- In another bowl, whisk together the almond milk, maple syrup, lemon juice, lemon zest, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in blueberries gently.
- Transfer the mixture into the prepared baking dish, spreading evenly.
- Bake in the preheated oven for about 35 minutes, or until the top is golden and set.
- Let it cool slightly before serving.
Notes
For best results, avoid overmixing the batter to keep the oats fluffy. Use frozen blueberries directly without thawing.
