Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 avocado, diced
  • 1 cup feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, diced
  • ¼ red onion, finely chopped
  • Fresh parsley, chopped
  • Olive oil (for drizzling)
  • Lemon juice (to taste)
  • Salt and pepper (to your liking)


Instructions

  1. In a large bowl, combine the chickpeas, diced avocado, feta cheese, cherry tomatoes, cucumber, and red onion.
  2. Drizzle with olive oil and lemon juice, then season generously with salt and pepper.
  3. Toss the ingredients together gently to avoid mashing the avocado.
  4. Add chopped parsley and mix once more to finish.

Notes
