Description
A refreshing Mediterranean salad combining tender chicken with a cool, tangy dressing, perfect for casual lunches or light dinners.
Ingredients
- 2 cups cooked chicken, diced or shredded
- 1 cucumber, diced
- 1 cup Greek yogurt
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Fresh dill, chopped
- Salt and pepper to taste
- Lettuce or greens, for serving
Instructions
- In a bowl, mix Greek yogurt, minced garlic, olive oil, lemon juice, and fresh dill. Season with salt and pepper.
- In a separate bowl, combine the cooked chicken and diced cucumber.
- Fold the yogurt dressing into the chicken mixture until well coated.
- Serve over a bed of fresh lettuce or greens.
Notes
For added crunch, sprinkle feta cheese or olives on top. Best add the dressing just before serving if storing leftovers.
