Description

A refreshing Mediterranean salad combining tender chicken with a cool, tangy dressing, perfect for casual lunches or light dinners.


Ingredients

  • 2 cups cooked chicken, diced or shredded
  • 1 cucumber, diced
  • 1 cup Greek yogurt
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Fresh dill, chopped
  • Salt and pepper to taste
  • Lettuce or greens, for serving


Instructions

  1. In a bowl, mix Greek yogurt, minced garlic, olive oil, lemon juice, and fresh dill. Season with salt and pepper.
  2. In a separate bowl, combine the cooked chicken and diced cucumber.
  3. Fold the yogurt dressing into the chicken mixture until well coated.
  4. Serve over a bed of fresh lettuce or greens.

Notes

For added crunch, sprinkle feta cheese or olives on top. Best add the dressing just before serving if storing leftovers.
