Description

A refreshing and satisfying meal packed with vibrant Mediterranean flavors, suitable for lunch, dinner, or a snack.


Ingredients

  • Whole wheat wraps or tortillas
  • Fresh spinach or mixed greens
  • Cherry tomatoes, halved
  • Cucumber, sliced
  • Red bell pepper, sliced
  • Carrot, grated
  • Creamy hummus
  • Feta cheese, crumbled
  • Olive oil
  • Lemon juice
  • Salt and pepper to taste


Instructions

  1. Lay out the wrap or tortilla on a clean surface.
  2. Spread a generous layer of hummus evenly across the wrap.
  3. Layer fresh spinach, halved cherry tomatoes, sliced cucumber, red bell pepper, and grated carrot on top.
  4. Sprinkle crumbled feta cheese generously over the veggies.
  5. Drizzle olive oil and lemon juice, then season with salt and pepper.
  6. Carefully roll the wrap tightly from one end to the other.
  7. Slice the wrap in half and serve immediately or pack up for later.

Notes

You can substitute veggies based on preference; for a dairy-free version, skip the feta and add more hummus.
