A quick and nutritious salmon salad that’s perfect for any occasion, featuring fresh veggies and creamy avocado.
Ingredients
- 1 Salmon fillet
- 1 Avocado, chopped
- 1 Tomato, chopped
- 1 Cucumber, chopped
- 1 Romaine lettuce, chopped
- 1 Red onion, chopped
- 2 tbsp Olive oil
- 2 tbsp Lemon juice
- Salt to taste
- Pepper to taste
Instructions
- Preheat your grill or oven.
- Cook the salmon fillet until fully cooked, about 15-20 minutes.
- While the salmon is cooking, chop the avocado, tomato, cucumber, and red onion into bite-sized pieces.
- In a large bowl, combine the chopped veggies with the romaine lettuce.
- Once the salmon is done, flake it into large pieces and add it to the salad mix.
- Drizzle olive oil and squeeze fresh lemon juice over the top.
- Season with salt and pepper to taste.
- Toss everything gently to combine and serve immediately.
