Description

A quick and nutritious salmon salad that’s perfect for any occasion, featuring fresh veggies and creamy avocado.


Ingredients

  • 1 Salmon fillet
  • 1 Avocado, chopped
  • 1 Tomato, chopped
  • 1 Cucumber, chopped
  • 1 Romaine lettuce, chopped
  • 1 Red onion, chopped
  • 2 tbsp Olive oil
  • 2 tbsp Lemon juice
  • Salt to taste
  • Pepper to taste


Instructions

  1. Preheat your grill or oven.
  2. Cook the salmon fillet until fully cooked, about 15-20 minutes.
  3. While the salmon is cooking, chop the avocado, tomato, cucumber, and red onion into bite-sized pieces.
  4. In a large bowl, combine the chopped veggies with the romaine lettuce.
  5. Once the salmon is done, flake it into large pieces and add it to the salad mix.
  6. Drizzle olive oil and squeeze fresh lemon juice over the top.
  7. Season with salt and pepper to taste.
  8. Toss everything gently to combine and serve immediately.

Notes

Store leftovers in an airtight container in the fridge for up to 1-2 days. Consider chilling your salad bowl and plates before serving.
