Quick and nutritious black-eyed peas cooked from frozen, perfect for busy weeknights.
Ingredients
- 4 cups frozen black-eyed peas
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 medium tomato, diced
- 3 cups vegetable broth or water
- 1 tablespoon olive oil
- 1 teaspoon salt (or to taste)
- ½ teaspoon black pepper
- Optional: 1 teaspoon smoked paprika or cayenne
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the diced onion and sauté until translucent, about 3-5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Mix in the diced tomato and cook for another 2 minutes to soften.
- Pour in the frozen black-eyed peas and vegetable broth.
- Add salt, pepper, and your choice of spices. Bring to a boil.
- Once boiling, reduce heat to low and let it simmer for about 20 minutes, or until the peas are tender.
- Adjust seasoning as desired and serve hot.
Notes
For a richer flavor, consider adding a piece of ham hock or smoked turkey while cooking. Always season towards the end of the cooking time to prevent over-seasoning.
