Description

Quick and nutritious black-eyed peas cooked from frozen, perfect for busy weeknights.


Ingredients

  • 4 cups frozen black-eyed peas
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium tomato, diced
  • 3 cups vegetable broth or water
  • 1 tablespoon olive oil
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • Optional: 1 teaspoon smoked paprika or cayenne


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté until translucent, about 3-5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Mix in the diced tomato and cook for another 2 minutes to soften.
  5. Pour in the frozen black-eyed peas and vegetable broth.
  6. Add salt, pepper, and your choice of spices. Bring to a boil.
  7. Once boiling, reduce heat to low and let it simmer for about 20 minutes, or until the peas are tender.
  8. Adjust seasoning as desired and serve hot.

Notes

For a richer flavor, consider adding a piece of ham hock or smoked turkey while cooking. Always season towards the end of the cooking time to prevent over-seasoning.
