Description

A hearty meal featuring tender chicken thighs enveloped in rich garlic butter, accompanied by perfectly roasted potatoes.


Ingredients

  • 4 Chicken thighs (bone-in or boneless)
  • 4 Potatoes (Yukon Gold or red)
  • 3 cloves Garlic (fresh, minced)
  • 4 tbsp Butter (unsalted)
  • 2 tbsp Olive oil
  • 1 tbsp Fresh herbs (thyme or parsley)
  • Salt and pepper to taste


Instructions

  1. Begin by seasoning the chicken with salt and pepper.
  2. In a large skillet, melt butter and olive oil over medium heat.
  3. Add minced garlic to the skillet, sautéing until fragrant.
  4. Place the chicken in the skillet, cooking until browned on both sides.
  5. Remove the chicken and toss in the potatoes, coating them in the remaining garlic butter.
  6. Nestle the chicken back into the skillet with the potatoes, cover, and let them cook together for about 20 minutes.
  7. Finish with fresh herbs for a burst of flavor.

Notes

For crispy skin, ensure the skillet is hot before adding the chicken. Avoid overcrowding the pan for even roasting.
