Ingredients
- 1 pound boneless, skinless chicken breast, diced
- 1 package gnocchi (about 16 ounces)
- 4 cloves garlic, minced
- 2 cups spinach (fresh or wilted)
- 1 cup chicken broth
- ½ cup heavy cream (or a non-dairy alternative)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Heat olive oil in a large skillet over medium heat. Add the diced chicken, seasoning with salt and pepper. Sauté until cooked through and golden brown, about 6-8 minutes.
- Remove the chicken from the skillet and set aside. In the same skillet, add minced garlic and sauté for about 1 minute, ensuring it doesn’t burn.
- Next, add the chicken broth and bring it to a simmer. Stir in the gnocchi and cook according to package instructions until tender, usually 2-3 minutes.
- Return the chicken to the skillet, then add heavy cream and spinach. Cook until the spinach wilts and the sauce thickens slightly, about 2-3 more minutes.
- Taste and adjust seasoning if necessary, then serve immediately topped with grated Parmesan cheese.
Notes
For added flavor, marinate chicken in olive oil, garlic, and herbs before cooking. Leftovers can be stored in an airtight container for up to 3 days.
