Ingredients
- 4 chicken breasts
- 4 cloves of garlic, minced
- 2 tablespoons fresh thyme, chopped (or 1 tablespoon dried)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 pounds potatoes, peeled and cubed
- ½ cup milk
- ¼ cup butter
- 1 pound carrots, sliced
- 2 tablespoons honey
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine garlic, thyme, olive oil, salt, and pepper. Rub this mixture over the chicken breasts.
- Place the chicken on a baking sheet and cook in the oven for about 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
- While the chicken is baking, boil the potatoes in salted water for about 15-20 minutes until tender. Drain and return them to the pot.
- Add milk and butter to the potatoes and mash until creamy. Season with salt and pepper as desired.
- In another pan, bring water to a boil and add the carrots. Cook for 5 minutes, then drain. Toss with honey and sauté for 3-4 minutes until glazed and tender.
Notes
For a stunning presentation, plate the mashed potatoes as a base, lay the chicken on top, and arrange the carrots around the edges. Marinating the chicken ahead of time enhances flavor.
