Description

A comforting dish of tender chicken infused with garlic and herbs, served with creamy mashed potatoes and vibrant glazed carrots.


Ingredients

  • 4 chicken breasts
  • 4 cloves of garlic, minced
  • 2 tablespoons fresh thyme, chopped (or 1 tablespoon dried)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • ½ cup milk
  • ¼ cup butter
  • 1 pound carrots, sliced
  • 2 tablespoons honey


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine garlic, thyme, olive oil, salt, and pepper. Rub this mixture over the chicken breasts.
  3. Place the chicken on a baking sheet and cook in the oven for about 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
  4. While the chicken is baking, boil the potatoes in salted water for about 15-20 minutes until tender. Drain and return them to the pot.
  5. Add milk and butter to the potatoes and mash until creamy. Season with salt and pepper as desired.
  6. In another pan, bring water to a boil and add the carrots. Cook for 5 minutes, then drain. Toss with honey and sauté for 3-4 minutes until glazed and tender.

Notes

For a stunning presentation, plate the mashed potatoes as a base, lay the chicken on top, and arrange the carrots around the edges. Marinating the chicken ahead of time enhances flavor.
