A juicy and flavorful meatloaf that blends comfort food with healthy twists, perfect for weeknight dinners.
Ingredients
- 1 lb lean ground chicken
- 3 cloves fresh garlic (minced)
- 1/2 cup grated parmesan cheese
- 1/2 cup plain breadcrumbs
- 2 large eggs
- 1 small onion (finely chopped)
- 1/4 cup ketchup (for topping)
- Salt and pepper to taste
- Additional ketchup or BBQ sauce (for serving)
Instructions
- Preheat your oven to 375°F (190°C). Prepare your baking dish by greasing it or lining it with parchment paper.
- In a large mixing bowl, combine the lean ground chicken, minced garlic, parmesan cheese, breadcrumbs, eggs, finely chopped onion, salt, and pepper. Mix until just combined.
- Transfer the mixture to your prepared baking dish and shape it into a uniform loaf.
- Spread ketchup evenly over the top of the loaf.
- Bake in the oven for 45-50 minutes until it reaches an internal temperature of 165°F (75°C).
- Remove from the oven and let it rest for 5-15 minutes before slicing and serving.
Notes
For a spicier twist, add jalapeños or sriracha to the mixture. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
