Description

A juicy and flavorful meatloaf that blends comfort food with healthy twists, perfect for weeknight dinners.


Ingredients

  • 1 lb lean ground chicken
  • 3 cloves fresh garlic (minced)
  • 1/2 cup grated parmesan cheese
  • 1/2 cup plain breadcrumbs
  • 2 large eggs
  • 1 small onion (finely chopped)
  • 1/4 cup ketchup (for topping)
  • Salt and pepper to taste
  • Additional ketchup or BBQ sauce (for serving)


Instructions

  1. Preheat your oven to 375°F (190°C). Prepare your baking dish by greasing it or lining it with parchment paper.
  2. In a large mixing bowl, combine the lean ground chicken, minced garlic, parmesan cheese, breadcrumbs, eggs, finely chopped onion, salt, and pepper. Mix until just combined.
  3. Transfer the mixture to your prepared baking dish and shape it into a uniform loaf.
  4. Spread ketchup evenly over the top of the loaf.
  5. Bake in the oven for 45-50 minutes until it reaches an internal temperature of 165°F (75°C).
  6. Remove from the oven and let it rest for 5-15 minutes before slicing and serving.

Notes

For a spicier twist, add jalapeños or sriracha to the mixture. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
