Description

A comforting and easy dish featuring tender chicken and creamy potatoes, perfect for busy weeknights or family gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 4 tablespoons olive oil
  • 5 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon paprika
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley leaves (optional for garnish)


Instructions

  1. In a large bowl, mix together the olive oil, minced garlic, thyme, rosemary, oregano, paprika, salt, and black pepper until well combined.
  2. Add the chicken breasts and halved baby potatoes to the mixture. Gently toss to ensure everything is evenly coated with the seasonings.
  3. Transfer the seasoned chicken and potatoes to the slow cooker, arranging them in an even layer.
  4. Cover the slow cooker and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is cooked through and the potatoes are fork-tender.
  5. About 30 minutes before serving, sprinkle the grated Parmesan cheese evenly over the chicken and potatoes.
  6. Cover once more and allow the cheese to melt during the remaining cooking time.
  7. Once ready, carefully remove the chicken and potatoes from the slow cooker and place them onto a serving platter.
  8. Garnish with fresh parsley, if using, and serve hot. Enjoy!

Feel free to swap dried herbs with fresh ones for an even more vibrant flavor.
