Ingredients
- 4 boneless, skinless chicken breasts
- 1.5 pounds baby potatoes, halved
- 4 tablespoons olive oil
- 5 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper, to taste
- 1 teaspoon paprika
- 1/2 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley leaves (optional for garnish)
Instructions
- In a large bowl, mix together the olive oil, minced garlic, thyme, rosemary, oregano, paprika, salt, and black pepper until well combined.
- Add the chicken breasts and halved baby potatoes to the mixture. Gently toss to ensure everything is evenly coated with the seasonings.
- Transfer the seasoned chicken and potatoes to the slow cooker, arranging them in an even layer.
- Cover the slow cooker and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is cooked through and the potatoes are fork-tender.
- About 30 minutes before serving, sprinkle the grated Parmesan cheese evenly over the chicken and potatoes.
- Cover once more and allow the cheese to melt during the remaining cooking time.
- Once ready, carefully remove the chicken and potatoes from the slow cooker and place them onto a serving platter.
- Garnish with fresh parsley, if using, and serve hot. Enjoy!
