Ingredients
- 4 bone-in, skin-on chicken thighs
- 1 lb baby potatoes (or new potatoes)
- 2 tbsp olive oil
- 4 fresh garlic cloves, minced
- 1/2 cup grated parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- Toss the chicken thighs with olive oil, minced garlic, parmesan cheese, Italian seasoning, salt, and pepper until well coated.
- Place the seasoned chicken thighs in a baking dish and surround them with baby potatoes.
- Drizzle additional olive oil over the potatoes, then season with salt and pepper.
- Transfer the dish to the oven and bake for about 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden and tender.
- Broil for an additional 2-3 minutes if desired for extra crispiness.
- Garnish with fresh parsley before serving.
