Description

Succulent chicken thighs paired with crispy potatoes and a robust combination of garlic and parmesan for a mouthwatering dish.


Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 lb baby potatoes (or new potatoes)
  • 2 tbsp olive oil
  • 4 fresh garlic cloves, minced
  • 1/2 cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the chicken thighs with olive oil, minced garlic, parmesan cheese, Italian seasoning, salt, and pepper until well coated.
  3. Place the seasoned chicken thighs in a baking dish and surround them with baby potatoes.
  4. Drizzle additional olive oil over the potatoes, then season with salt and pepper.
  5. Transfer the dish to the oven and bake for about 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden and tender.
  6. Broil for an additional 2-3 minutes if desired for extra crispiness.
  7. Garnish with fresh parsley before serving.

Notes

For deeper flavor, consider marinating the chicken in garlic and parmesan for a few hours before cooking. Any leftovers can be stored in an airtight container for up to 3 days in the refrigerator or frozen for up to 2 months.
