Ingredients
- 4 chicken thighs (bone-in, skin-on)
- 2 pounds Yukon Gold or red potatoes, cut into equal-sized pieces
- 4 cloves fresh garlic, minced
- 1 cup grated parmesan cheese
- 2 tablespoons olive oil
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Mix olive oil, minced garlic, Italian seasoning, salt, and pepper in a bowl.
- Toss the chicken thighs in the mixture, ensuring they are well coated.
- Add the cut potatoes to the bowl, mixing them with the remaining oil and seasoning.
- Place the chicken and potatoes in a baking dish or sheet pan, with the chicken skin side up.
- Sprinkle grated parmesan cheese over everything generously.
- Bake for 35-45 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are tender.
