Description

A delightful one-pan dish featuring succulent chicken thighs and tender potatoes, infused with garlic and parmesan flavors.


Ingredients

  • 4 chicken thighs (bone-in, skin-on)
  • 2 pounds Yukon Gold or red potatoes, cut into equal-sized pieces
  • 4 cloves fresh garlic, minced
  • 1 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix olive oil, minced garlic, Italian seasoning, salt, and pepper in a bowl.
  3. Toss the chicken thighs in the mixture, ensuring they are well coated.
  4. Add the cut potatoes to the bowl, mixing them with the remaining oil and seasoning.
  5. Place the chicken and potatoes in a baking dish or sheet pan, with the chicken skin side up.
  6. Sprinkle grated parmesan cheese over everything generously.
  7. Bake for 35-45 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are tender.
  8. Garnish with fresh parsley before serving.

Notes

For extra crispy skin, broil the dish for the last 3-5 minutes. Marinating the chicken overnight can enhance the flavor.
