Description

Crispy chicken thighs paired with buttery baby potatoes in a rich garlic and parmesan coating, perfect for family dinners and festive gatherings.


Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 1 pound baby potatoes, halved
  • 4 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic, Parmesan, salt, and pepper.
  3. Rub this mixture thoroughly over the chicken thighs and place them in a baking dish.
  4. Toss the halved potatoes in the remaining oil mixture and arrange them around the chicken.
  5. Roast for 35-40 minutes, or until the chicken is golden and the potatoes are tender.
  6. Let rest for a few minutes, then garnish with freshly chopped parsley if desired.

Notes

For extra flavor, consider marinating the chicken thighs the night before. Serve with a fresh salad or steamed vegetables.
