Ingredients
- 4 chicken thighs, bone-in and skin-on
- 1 pound baby potatoes, halved
- 4 cloves garlic, minced
- ½ cup grated Parmesan cheese
- 3 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix olive oil, garlic, Parmesan, salt, and pepper.
- Rub this mixture thoroughly over the chicken thighs and place them in a baking dish.
- Toss the halved potatoes in the remaining oil mixture and arrange them around the chicken.
- Roast for 35-40 minutes, or until the chicken is golden and the potatoes are tender.
