Description

Juicy chicken thighs paired with tender potatoes, coated in savory garlic and Parmesan for a hearty meal.


Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 pound Yukon Gold or baby potatoes
  • 4 cloves garlic, minced
  • 1/2 cup grated or shaved Parmesan cheese
  • 1/4 cup olive oil
  • Fresh herbs (like parsley or thyme) for garnish
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine olive oil, minced garlic, salt, and pepper.
  3. Toss the chicken thighs in the garlic mixture until well coated.
  4. Arrange the seasoned chicken thighs in a baking dish, skin side up.
  5. In the same bowl, toss the potatoes with any remaining garlic mixture, then add them around the chicken.
  6. Bake in the preheated oven for about 35-40 minutes, until the chicken is cooked through and the potatoes are tender.
  7. In the last few minutes of baking, sprinkle grated Parmesan over the chicken and potatoes.
  8. Broil for an additional 2-3 minutes to achieve a crispy, golden top.
  9. Let rest for a few minutes before serving.
