Ingredients
- 4 bone-in, skin-on chicken thighs
- 1 pound Yukon Gold or baby potatoes
- 4 cloves garlic, minced
- 1/2 cup grated or shaved Parmesan cheese
- 1/4 cup olive oil
- Fresh herbs (like parsley or thyme) for garnish
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine olive oil, minced garlic, salt, and pepper.
- Toss the chicken thighs in the garlic mixture until well coated.
- Arrange the seasoned chicken thighs in a baking dish, skin side up.
- In the same bowl, toss the potatoes with any remaining garlic mixture, then add them around the chicken.
- Bake in the preheated oven for about 35-40 minutes, until the chicken is cooked through and the potatoes are tender.
- In the last few minutes of baking, sprinkle grated Parmesan over the chicken and potatoes.
- Broil for an additional 2-3 minutes to achieve a crispy, golden top.
- Let rest for a few minutes before serving.
