Description

A savory and easy-to-make crockpot dish featuring tender chicken and baby potatoes infused with garlic and Parmesan flavors, perfect for any occasion.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 3 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 5 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Lightly grease the crockpot with 1 tablespoon of olive oil.
  2. Evenly arrange the halved baby potatoes and chicken breasts at the bottom of the pot.
  3. In a small bowl, blend the remaining olive oil, grated Parmesan, minced garlic, Italian seasoning, salt, and black pepper.
  4. Drizzle the Parmesan garlic mixture over the chicken and potatoes, ensuring everything is well-coated.
  5. Cover and cook on low for 4 hours, or until the chicken is thoroughly cooked and the potatoes are tender.
  6. Garnish with fresh parsley before serving. Enjoy!

Notes

For a creamier sauce, consider stirring in a couple of tablespoons of cream cheese during the last hour of cooking. Fresh herbs can elevate flavors; consider adding fresh thyme or rosemary.
