Ingredients
- Boneless, skinless chicken breasts or thighs
- Baby potatoes (or any small potatoes)
- 4 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 1 cup chicken broth
- 2 tablespoons olive oil
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper, then sear for about 2-3 minutes on each side until golden brown.
- In your slow cooker, add the baby potatoes. Pour in the chicken broth, and add minced garlic and Italian seasoning.
- Place the seared chicken on top of the potatoes and sprinkle with grated Parmesan cheese.
- Cover and cook on low for 6-8 hours, or until the chicken is tender and cooked through.
- Before serving, sprinkle additional Parmesan on top if desired.
Notes
Serve alongside a fresh green salad or crusty bread for a complete meal. Store leftovers in an airtight container in the refrigerator for up to 4 days.
