Description

Tender chicken simmered with garlic, parmesan, and baby potatoes in a slow cooker for a comforting dish perfect for family gatherings.


Ingredients

  • Boneless, skinless chicken breasts or thighs
  • Baby potatoes (or any small potatoes)
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper, then sear for about 2-3 minutes on each side until golden brown.
  2. In your slow cooker, add the baby potatoes. Pour in the chicken broth, and add minced garlic and Italian seasoning.
  3. Place the seared chicken on top of the potatoes and sprinkle with grated Parmesan cheese.
  4. Cover and cook on low for 6-8 hours, or until the chicken is tender and cooked through.
  5. Before serving, sprinkle additional Parmesan on top if desired.

Notes

Serve alongside a fresh green salad or crusty bread for a complete meal. Store leftovers in an airtight container in the refrigerator for up to 4 days.
