Description

A hearty meal featuring tender chicken and flavorful potatoes infused with garlic and Parmesan, cooked in a slow cooker for minimal effort.


Ingredients

  • 4 bone-in chicken thighs (skin-on for extra flavor)
  • 2 pounds baby potatoes, halved
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chicken broth
  • Fresh parsley, for garnish (optional)


Instructions

  1. Place the halved baby potatoes at the bottom of the slow cooker.
  2. Season the chicken thighs with salt, pepper, and Italian seasoning.
  3. Layer the chicken over the potatoes.
  4. In a small bowl, mix together the minced garlic, Parmesan, and chicken broth.
  5. Pour the mixture evenly over the chicken and potatoes.
  6. Cover and cook on low for 6 hours or until the chicken is tender and the potatoes are cooked through.

Notes

For extra flavor, consider searing the chicken thighs before cooking. Store leftovers in an airtight container for up to 4 days.
