Description

This slow cooker dish features tender chicken breasts and potatoes infused with garlic and Parmesan, creating a hearty meal perfect for any occasion.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 medium potatoes, diced (Yukon Gold or red potatoes)
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian herbs (such as oregano or basil)
  • Salt and pepper to taste
  • 1 cup chicken broth
  • Fresh parsley for garnish (optional)


Instructions

  1. Place the diced potatoes at the bottom of the slow cooker.
  2. Season the chicken breasts with salt, pepper, and Italian herbs; place them on top of the potatoes.
  3. Pour the chicken broth over the chicken and potatoes.
  4. In a small bowl, mix the minced garlic with the grated Parmesan cheese; spread this mixture over the chicken.
  5. Cover and cook on low for 6 hours, or until the chicken is tender and the potatoes are fork-tender.
  6. Garnish with fresh parsley before serving.
