Description

A moist and flavorful meatloaf with a delightful glaze, perfect for family dinners and potlucks.


Ingredients

  • 2 lbs ground beef (80/20 blend for juiciness)
  • ½ cup breadcrumbs (panko or regular)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • ¼ cup milk
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tbsp ketchup
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • 1 tbsp fresh parsley, chopped
  • ½ cup ketchup (for glaze)
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard (for glaze)
  • 1 tbsp Worcestershire sauce (for glaze)
  • ½ tsp apple cider vinegar (for glaze)


Instructions

  1. Preheat your oven to 375°F (190°C) and either grease a loaf pan or line a baking sheet with parchment paper.
  2. In a skillet, sauté the finely chopped onions and minced garlic in a splash of olive oil until they are soft and fragrant. Then set aside to cool.
  3. In a large mixing bowl, combine the ground beef, breadcrumbs, beaten eggs, milk, Worcestershire sauce, Dijon mustard, ketchup, salt, black pepper, smoked paprika, and chopped parsley. Mix until just combined; avoid overmixing to keep it tender.
  4. Shape the mixture into a tight, even loaf and place it in your prepared loaf pan.
  5. In a separate bowl, whisk together the glaze ingredients: ketchup, brown sugar, Dijon mustard, Worcestershire sauce, and apple cider vinegar until smooth.
  6. Brush a thin layer of the glaze over the top of the meatloaf before placing it in the oven.
  7. Bake uncovered for 45 minutes. Afterward, brush with more glaze and continue baking for an additional 15 minutes. The total baking time should be about 60 minutes.
  8. Use a meat thermometer to check the internal temperature; it should reach 160°F (71°C) for safe consumption.
  9. Allow the meatloaf to rest for about 10 minutes before slicing.
  10. Serve with your favorite sides, such as mashed potatoes or roasted vegetables.

Notes

Use a mix of meats for added flavor, and feel free to incorporate grated vegetables for extra nutrition.
