Description

A vibrant Mediterranean-inspired dish featuring juicy grilled chicken tenders marinated in herbs and lemon.


Ingredients

  • 1 pound chicken tenders
  • 1/4 cup olive oil
  • Juice of 2 fresh lemons
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • Fresh parsley for garnish
  • Salt and pepper to taste


Instructions

  1. Whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper in a medium bowl.
  2. Add the chicken tenders to the marinade, coating them thoroughly. Let them marinate for at least 30 minutes (or up to 2 hours for deeper flavor).
  3. Preheat the grill or oven. If using a grill, prepare for medium-high heat; for the oven, set to 400°F.
  4. Cook the chicken tenders for about 6-7 minutes per side, or until they reach an internal temperature of 165°F.
  5. Remove from heat and let rest for a few minutes before serving.

Notes

Pairs well with a Greek salad or tzatziki sauce. Store leftovers in an airtight container for up to 3 days.
