Juicy chicken marinated with lemon and topped with feta for a delicious Mediterranean experience.
Ingredients
- 4 boneless, skinless chicken breasts
- Juice and zest of 2 lemons
- 3 tablespoons olive oil
- 2 teaspoons dried oregano
- Salt and pepper to taste
- 1 cup crumbled feta cheese
- 1/2 cup pitted kalamata olives (optional)
- Fresh parsley for garnish
Instructions
- In a bowl, whisk together lemon juice, zest, olive oil, oregano, salt, and pepper.
- Place the chicken in the marinade and let it sit for at least 30 minutes, or up to 2 hours.
- Preheat your oven to 400°F (200°C).
- Heat a skillet over medium-high heat. Add the marinated chicken and sear for about 5 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and sprinkle the feta over the top.
- Bake in the oven for 15-20 minutes until the chicken is cooked through.
- Optional: Add kalamata olives during the last 5 minutes of baking for added flavor.
- Garnish with fresh parsley before serving.
Notes
For added moisture, consider brining the chicken beforehand. Fresh herbs can elevate the dish’s flavor.
