Description

Juicy chicken marinated with lemon and topped with feta for a delicious Mediterranean experience.


Ingredients

  • 4 boneless, skinless chicken breasts
  • Juice and zest of 2 lemons
  • 3 tablespoons olive oil
  • 2 teaspoons dried oregano
  • Salt and pepper to taste
  • 1 cup crumbled feta cheese
  • 1/2 cup pitted kalamata olives (optional)
  • Fresh parsley for garnish


Instructions

  1. In a bowl, whisk together lemon juice, zest, olive oil, oregano, salt, and pepper.
  2. Place the chicken in the marinade and let it sit for at least 30 minutes, or up to 2 hours.
  3. Preheat your oven to 400°F (200°C).
  4. Heat a skillet over medium-high heat. Add the marinated chicken and sear for about 5 minutes on each side until golden brown.
  5. Transfer the chicken to a baking dish and sprinkle the feta over the top.
  6. Bake in the oven for 15-20 minutes until the chicken is cooked through.
  7. Optional: Add kalamata olives during the last 5 minutes of baking for added flavor.
  8. Garnish with fresh parsley before serving.

Notes

For added moisture, consider brining the chicken beforehand. Fresh herbs can elevate the dish’s flavor.
