Description

Zesty Greek chicken kabobs marinated in yogurt and herbs, perfect for grilling this summer.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup plain Greek yogurt
  • 1/4 cup extra-virgin olive oil
  • Juice of 1 lemon
  • 4 cloves of garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Bell peppers, onions, or your favorite vegetables for skewering
  • Wooden or metal skewers (if using wooden, soak them in water for 30 minutes)


Instructions

  1. Combine the Greek yogurt, olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper in a large mixing bowl.
  2. Add the chicken pieces to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 1 hour, or ideally overnight.
  3. Preheat your grill to medium-high heat.
  4. Prepare your vegetables by cutting them into bite-sized pieces.
  5. Thread the marinated chicken and vegetables onto the skewers, alternating for color.
  6. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through.
  7. Remove from the grill and let them rest for a few minutes before serving.

Notes

Serve with Greek salad, rice pilaf, or warm pita bread. Drizzle with tzatziki sauce for extra creaminess.
