Description
Zesty Greek chicken kabobs marinated in yogurt and herbs, perfect for grilling this summer.
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 cup plain Greek yogurt
- 1/4 cup extra-virgin olive oil
- Juice of 1 lemon
- 4 cloves of garlic, minced
- 2 teaspoons dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Bell peppers, onions, or your favorite vegetables for skewering
- Wooden or metal skewers (if using wooden, soak them in water for 30 minutes)
Instructions
- Combine the Greek yogurt, olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper in a large mixing bowl.
- Add the chicken pieces to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 1 hour, or ideally overnight.
- Preheat your grill to medium-high heat.
- Prepare your vegetables by cutting them into bite-sized pieces.
- Thread the marinated chicken and vegetables onto the skewers, alternating for color.
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through.
- Remove from the grill and let them rest for a few minutes before serving.
Notes
Serve with Greek salad, rice pilaf, or warm pita bread. Drizzle with tzatziki sauce for extra creaminess.
