Description

A refreshing pasta salad with creamy dressing, fresh greens, and vibrant vegetables, perfect for warm days and picnics.


Ingredients

  • 8 ounces pasta (your choice)
  • 1 cup fresh basil leaves
  • 1 cup fresh parsley leaves
  • 1 cup Greek yogurt or sour cream
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumbers, diced
  • Optional: ½ cup chopped bell peppers or olives


Instructions

  1. Cook the pasta according to package instructions. Drain and rinse under cold water to stop cooking.
  2. In a blender or food processor, combine basil, parsley, Greek yogurt, lemon juice, olive oil, minced garlic, salt, and pepper. Blend until smooth.
  3. In a large bowl, combine the cooled pasta, cherry tomatoes, cucumbers, and any additional optional ingredients.
  4. Pour the dressing over the pasta salad and toss well to coat.
  5. Taste and adjust seasoning if needed. Serve immediately or chill for about an hour for the best flavors.

Notes

This pasta salad can be made in advance and stored in an airtight container in the refrigerator for up to three days.
