Ingredients
- 1.5 lbs chicken breast
- 2 cups fresh broccoli, cut into florets
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- 1 tablespoon lemon juice
- Salt and pepper, to taste
Instructions
- Marinate the chicken: In a bowl, combine olive oil, minced garlic, salt, and pepper. Add the chicken breasts and marinate for at least 15 minutes.
- Grill the chicken: Preheat your grill on medium-high. Grill the marinated chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F. Once grilled, let it rest before slicing.
- Blanch the broccoli: While the chicken is grilling, bring a pot of salted water to a boil. Add the broccoli florets and cook for 2-3 minutes until vibrant green. Drain and set aside.
- Prepare the garlic sauce: In a saucepan, heat a bit of olive oil and sauté minced garlic until fragrant. Add in the heavy cream and bring to a slight simmer. Stir in the Parmesan cheese until melted and smooth. Finish with lemon juice, salt, and pepper.
- Assemble the bowls: Slice the grilled chicken and arrange it in bowls with the blanched broccoli. Drizzle generously with the creamy garlic sauce before serving.
