Juicy grilled chicken kabobs with colorful vegetables, perfect for summer gatherings.
Ingredients
- 1.5 lbs chicken breast, cut into 1-inch cubes
- 1 bell pepper, cut into chunks (any color)
- 1 red onion, cut into chunks
- 1 zucchini, sliced
- 2 tablespoons olive oil
- 3 tablespoons soy sauce
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper to taste
- Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes)
Instructions
- Combine olive oil, soy sauce, lemon juice, minced garlic, paprika, salt, and pepper in a large bowl. Whisk until well mixed.
- Add the chicken cubes to the marinade, ensuring they are well coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 3 hours for extra flavor.
- Prepare your vegetables and skewer them along with the marinated chicken, alternating for a colorful presentation.
- Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are glowing with a light layer of ash.
- Place the kabobs on the grill and cook for about 10-15 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.
- Remove from the grill and let the kabobs rest for a few minutes before serving.
Notes
For maximum flavor, marinate overnight. Use similar sizes for vegetables for even cooking.
