Ingredients

  • 1 to 1.5 pounds flank steak
  • 2 tablespoons olive oil
  • 2-3 cloves minced garlic
  • 1/4 cup soy sauce
  • Fresh herbs (such as basil or parsley)
  • 1 red bell pepper, thinly sliced
  • Fresh spinach or other leafy greens
  • Salt and pepper to taste


Instructions

  1. Marinate the flank steak: In a bowl, mix olive oil, soy sauce, minced garlic, salt, and pepper. Coat the flank steak with the marinade and let it rest for at least 30 minutes.
  2. Prepare the filling: Lay the marinated steak flat on a clean surface. Top it with a layer of sliced red bell peppers and fresh spinach, spreading them evenly.
  3. Roll the steak: Starting from one end, carefully roll the steak tightly to form a log. Secure with kitchen twine or toothpicks to hold its shape.
  4. Preheat the grill: Heat your grill to medium-high. Once hot, place the pinwheels on the grill.
  5. Grill the pinwheels: Cook for about 5-7 minutes on each side, or until the steak reaches your desired doneness. Use a meat thermometer for accuracy—aim for 130°F for medium-rare.
  6. Rest and slice: Remove the pinwheels from the grill and let them rest for about 5 minutes. Then, slice into pinwheels and serve.
